I’m so happy with how it turned out – so often, ‘gluten-free’ is associated with being very medical and clinical, so I wanted it to be as far away from that as possible. There is no way that some random girl who bakes gluten-free cakes in Essex would ever get an opportunity like this without the support of a lot of amazing humans (yes, that’s you! Lactose-free recipes only use lactose-free products (like lactose-free milk, cheese or cream) and low-lactose recipes use regular dairy products (like hard cheeses or actual butter) which contain trace amounts of lactose.
